Well, today’s blog is pretty simple and straightforward. Short, sweet, and to-the-point. Kind of like this summer has been. No seriously, where did this summer go?!
Classic BLTs for dinner.
I know, kind of a cop-out on the whole, making dinner/learning to cook thing. But, the side benefit of creating an environment for myself to learn to cook more, is that I’m actually cooking more. I’m regularly helping to make dinner, and since I don’t like to cook that’s a big feat in our house.
So I made BLTs for dinner.
My favorite way to cook bacon is in the oven. (See first food blog post about blueberries to find out the reason.)
A cookie sheet, tin foil, lay the bacon out. Put it in the oven (NOT PREHEATED!) turn the oven on to 400 degrees F, start a timer for 20 minutes, and that’s it. Pull the bacon out and finish like you normally would with bacon, plate, paper towels, leaving it in the grease, whatever your heart desires (just make sure you don’t only eat bacon so that your heart can keep desiring).
I used to hate tomatoes. I wouldn’t even eat them in a salad, I just ate lettuce and croutons and dressing and called it a “salad.” At some point my taste buds decided tomatoes were delicious. So now I eat them on and in everything. I will even eat tomatoes by themselves. My favorites though are fresh tomatoes from a garden or a farm market. That’s when they’re best in my opinion.
BLTs blah blah blah, we all know them and probably love them, and there are lots of variations but this was not one of those times…let’s get to the baking part.
Mint Julep Cupcakes. I love to look through magazines. I love to keep magazines forever and ever. And I love to keep magazines forever and ever with the intention of using a single recipe out of them.
Luckily I found a random magazine I had lying around just in time to do some summer baking with my fresh mint. Mint Julep Cupcakes turned out quite wonderful, and even had my niece asking me to make more cupcakes.
I had just recently bought some new baking cups to use, since I didn’t even have any paper liners. I had never used them before, but they are fantastic! So easy to use, so easy to clean. I highly recommend you pick up a set for yourself!
